ASW torpedoes with no sonar could be described as overdoing it. Gabriel is a fairly light SSM though.

I'd ditch the torpedoes and replace them with a 40mm gun. None of your enemies are likely to have modern submarines for the forseable future.

Would a Fast Forty be appropriate or would using old Bofors guns be a better solution?

If you can find a drawing of the single Fast Forty you could use that. It's a rather expensive gun though.

Will the twin mounting be too wide? Also, does the Fast Forty have its directors mounted on the turret or is it separated?

Actually, I've looked into it some more and it appears the Fast Forty isn't an option. The first Italian 40mm/70 didn't come off the line until 1969, and that was an open twin mount.
Instead you'll have to go for a Swedish built gun. I posted a Destroyer in my AU thread a while ago that have for of those.
